Master Degree on ITALIAN FOOD AND WINE at the School of Agricultural Sciences and Veterinary Medicine of the University of Padova (Italy).
The Italian Food and Wine is a two years MSc course addressed to graduate students holding a university degree (BSc) and an English knowledge at a B2 level according to the Common European Framework of Reference for Languages (CEFR) .
With reference to the well-recognised Italian foods and wines, the course, taught in English, focuses on technology, nutrition, food safety, diet and health, and sensory science and is defined by lectures as well as by practical sessions and field activities.
Topics include, but are not limited to:
Quality, processing and sensorial analysis of food and wine; Food microbiology and quality;
Food safety and hygiene;
Food, wine and nutrition;
Consumer demand and behavior;
Quality-oriented Food and Wine management and governance;
Food and Wine history, anthropology and society;
Food and wine perspectives from abroad.
